Led by Chef/Owner Mark Bolchoz, Cane Pazzo reflects his personal journey—rooted in Charleston, shaped by Italian kitchens, and inspired by family.

Chef and Owner Mark Bolchoz founded Cane Pazzo as a heartfelt return to his roots. A native Charlestonian and graduate of The Culinary Institute of America, Mark’s career has taken him from Palm Beach to the Hudson Valley. After returning to Charleston in 2016, he worked in some of the city’s most respected kitchens, including Peninsula Grill and The Grocery, before leading the kitchen at Indaco and eventually overseeing Italian concepts as Culinary Director for the Indigo Road Hospitality Group.
Cane Pazzo is the culmination of all of these experiences. Together with his wife, Ariana, who is also a CIA alum, Mark created the kind of place they’d always dreamed of: family-owned, approachable, and welcoming to all. The restaurant’s name, Cane Pazzo (“Mad Dog”), is a tribute to Mark’s childhood nickname, given to him by his grandfather, a fellow Hanahan entrepreneur who operated a local business for over 30 years. Growing up in the Lowcountry, Mark was surrounded by Southern hospitality, whether that was spending time in his uncle’s downtown pub or shrimping and fishing off his grandfather’s dock, which continues to inspire his cooking today.

The kitchen philosophy starts with seasonality and respect for ingredients, celebrating what’s fresh, local, and abundant in the Lowcountry. Every dish is a conversation between Southern and Italian foodways, brought to life through the lens of classic technique and personal experiences.
Refined yet approachable, the menu centers around handmade pastas, wood-fired proteins, and shareable plates, inviting guests to experience food the way it’s meant to be enjoyed: together.
